Ingredients
- 1 tablespoon madras curry powder
- 1 lemon, juiced
- 1/2 cup mayonnaise
- 2 cups 1/2 inch diced turkey breast meat
- 2 pears, peeled and cut 1/2 inch dice
- 3 scallions, sliced
- Salt and black pepper
- 2 romaine lettuce hearts, washed, dried, and cut into large chiffonade
Directions
Mix the curry with the lemon juice, to dissolve. Mix in the mayonnaise. Fold in with the turkey, pears, and scallions. Season. Serve on a bed of romaine leaves.
Wine suggestion: Bernadus Chardonnay 1997

I had some leftover turkey that got too dry when I made it over a month ago...it was frozen until recently and sat in the fridge for a few days....THEN I diced it a bit smaller than suggested. I used a bit more mayo to keep the right coating consistency. I made this about 4 hours ahead and added a little more lemon juice closer to the serving time and only cut the lettuce up right before service. BRIGHT DELICIOUS AND QUICK!!!! Will definitely be making again and my family loved it!!

This recipe was quick and easy to make and tasted delcious! It was a great way to use up leftover Thanksgiving turkey in a new way. I added some golden raisins for a little extra oomph. I will definitely make this again.
