Okay, the recipe title sounds fussy, yeah. It turned out to be anything but. The brining made the turkey turn out fabulous, and the whole recipe was less work than any other I've seen on the site (sorry, AB. I'd say it was as good as, if not better, than many of my other favourite chef's brined turkey recipes on the site. (I've tried three others.
Also, even though we didn't have shiitake mushrooms, I subbed portabellos and it turned out fine. Ming, you are the king, bay-bee!
