I am an amateur foodie who loves to cook in her free time, and just came into possession of bottle of white truffle oil. This was the ONLY recipe I found that popped out at me and begged me to try making it. It was fairly simple, had lovely flavor, and I will definitely be making it again! Thanks Jeffrey!

This is fantastic! We've had it for breakfast with orange juice and dinner with wine. It's one of those dishes you find yourself craving in the middle of the day. Delectable comfort food.

A GORGEOUS PRESENTATION AND TASTE. LOVED THE TRUFFLE OIL AND WAS REALLY LOOKING FORWARD TO JEFF'S SHOW WHICH WOULD HAVE HIGHLIGHTED 'INTERESTING' INGREDIENTS. THIS RECIPE IS OUTSTANDING AND I THINK HE WOULD HAVE BROUGHT SOMETHING APPEALING TO THE FOOD NETWORK LINEUP. ALSO REALLY ENJOYED HIS CALM, ASSURED PERSONALITY....

I recently purchased some truffle oil, so I made this for dinner last night. Both my husband and I loved it (even though I slightly overcooked the eggs. The combination of the greens, egg yolk and truffle oil turned a simple dish to something that was very special. However, the next time I make it (and there WILL be a next time I am thinking of substituting spinach for a arugula...just as a personal preference. Definitely a winner.

This recipe was well worth the time and money. I have never had Bruschetta like this before and it just proves once again that you can reinvent a classic Italian dish and make it taste amazing! Outstanding work!

Served this with a bit of romance and candlelight last night for dinner. Excellent with a glass of wine. I did find the Truffle Oil a little pricey but well worth the investment after my first mouthful. In a work "Excellent".
