    I have make these several times now and I love that she uses the crushed pineapple instead of rings.

    Was great, but there is no way all that mix will fit into just 6 mini bundt cakes. I had to make one large bundt cake. Maybe next time I'll make several small ones, but if the recipe says it will make six. That's why it got 4 stars. Tastes great, but if you have to improvise from the start just to make it work, it's not a 5 star recipe. But it does taste amazing, once it's all finished!

    I made this cake for my dad for father's day he loved it!i put the cake in one big bunt pan(could not find mini bunt pans and it was delious.the pineapple juice made the cake very moist.The caramalized pineapple was wonderful just as is.My dad wants me to make him another one! THANK'S GIADA MY FAMILY LOVES THIS I'M MAKING THIS AGIAN!!!

    Like others, I made a few tweaks to this recipe. I used fresh pineapple, whole eggs (albeit by accident and vanilla extract (because I couldn't find the almond extract. I also stirred some cinnamon and a couple of tablespoons of crushed pineapple into the cake batter. I used muffin tins instead of mini bundts. Extra tasty when topped with vanilla ice cream! Will definitely make again. THANKS, GIADA!!

    Making this cake was very easy. It had a very delicious taste, although the topping was extremely sweet. Instead of making mini cakes as noted in the recipe. I made 1 large cake. I plan to do the pineapple cake again, with less topping and less brown sugar. :

    The cake itself was good but the topping was so sweet. I could barely get it down. I used two normal size bundt pans and extended the cooking time for five minutes. The cake was so light and fluffy. I would make this without the topping next time!!

    My family loved the recipe. I add two tablespoons of rum to the pineapple mixture to give it extra punch. And I served the cakes with coconut sorbet. A great and light ending to any meal. I had enough cake mixture to make 10 mini-Bundt cakes so next time I would double the pineapple mixture.

    These were so delicious! Didn't have the mini bundt pans, so used the Petite Loaf pans (Wilton and they were wonderful! Used a butter-yellow cake mix w/whole eggs, but otherwise followed recipe (canned-crushed pienapple Had enough topping for 9 mini loaves (about 2"x4"x1" and then enough batter left for a shallow full sized loaf. Would have made a little more pineapple topping next time, but the taste was great!!!

    I tried this recipe to finally use my mini bundt pan. I changed it a bit used whole eggs and a pineapple cake mix. I had lots of both topping and cake left over so I put it in a one layer cake pan. My family loved this. They didn't last long.

    Well, I looked at a few places and couldn't find a mini bundt pan, so I decided to use a muffin pan. I'm sure you can all figure out the problem with that. When it came time to flip the pan over and let it cool, I couldn't do that because of the muffin tops. The muffins all just fell out, leaving the pineapple topping behind. I simply scooped it out and placed it on the top (really the bottom of my muffins. They were actually really good like that! I made them on Valentine's Day and we had a few people over, and we all devoured the muffins throughout the day! They were moist and delicious and so easy to whip up!

    I did use canned chuck pineapple that I ground in the vitamix, and I didn't have almond extract so I used vanilla.

    Great recipe!
