Ingredients

  • Nonstick cooking spray, as needed
  • 1 packet 25-calorie hot cocoa mix
  • 3 level tablespoons devil's food cake mix (not packed)
  • 1 tablespoon fat-free liquid egg substitute
  • 1 sugar-free 60-calorie chocolate pudding snack, divided
  • 1 teaspoon mini semi-sweet chocolate chips
  • Fat-free whipped topping, for serving, optional
  • Fresh mint leaves, for serving, optional
  • Special equipment: Microwave-safe mug

Directions

Spray a large microwave-safe mug with nonstick spray. Add cocoa mix, cake mix, egg substitute, and 2 tablespoons water. Mix well.

Add chocolate chips and about a third of the pudding to the mug, and stir gently to combine. Microwave for 1 minute.

Fluff with a fork, and then gently mix in the remaining pudding. Microwave for 1 more minute.

Let cool slightly. Top with whipped topping and garnish with mint, if using. Dig in!

PER SERVING (entire recipe): 223 calories, 5g fat, 588mg sodium, 45.5g carbs, 2.75g fiber, 19g sugars, 6.5g protein

    This was delightfully delicious, as a nice sensible treat especially when you need a chocolate fix and you don't want to overindulge and not feel "as guilty"! Some of the previous reviews were a little negative based on the fact the results, for them, yielded a glob of chocolate "something" so I knew that going in. I follwed the directions to a "T" and got something similar; however, realizing that this dessert is a spin off of the "Mississippi Mud Pie", which in itself has a pudding-like consistency, I thought the results were right on point. I also realized that if you don't want the "glob", then omit the final step of adding the rest of the pudding and you'll get more of a cake-like texture. The whip on top was heavenly, OMG let me tell you! Thing only I may add the next time (knowing that it may change the calorie count and knowing that there will be a next time : is a tbl. spoon of chopped roasted pecans, 'lawd have mercy! Absolutely delicious ;

    I bought all the chocolate-y ingredients hoping for a go-to dessert, and followed the cooking directions to my disappointment. Gooey globby texture that I don't want to repeat.

    The same thing happened to me J.B. It just turned into a gooey mess. I tried putting it in the microwave longer...didn't help. Will someone please help us? What are we doing wrong?
