Mixed Greens with Balsamic Vinaigrette
- 2 tablespoons plus 2 teaspoons extra virgin olive oil
- 2 tablespoons balsamic vinegar
- 1 pound mixed tender lettuces
- 16 larger shavings Parmesan cheese (about 2 ounces)
In a large bowl, whisk together the remaining 2 tablespoons plus 2 teaspoons olive oil, salt and pepper to taste, and the vinegar. Add the lettuce and toss thoroughly. Distribute the lettuce evenly among four salad plates. Top with Parmesan Shavings.
