Monkey Skewers

Ingredients
  • 2 ounces semisweet chocolate, chopped
  • 2 tablespoons creamy peanut butter
  • 1 teaspoon canola or coconut oil
  • 2 bananas, cut into 12 (1-inch) slices
  • 1/2 cup roasted salted peanuts, finely chopped
  • 2 teaspoons rainbow jimmies
  • 24 miniature peanut butter cups, preferably a mix of white, milk, and dark chocolate
Directions
  • Melt the chocolate, peanut butter, and oil in a small saucepan over low heat, stirring. Remove from the heat and fold in the banana slices until evenly coated. Place the peanuts and jimmies in a small bowl.

  • Dredge each banana slice into the mixture, using a skewer, then spear a peanut butter cup on the end.

  • Place on a wax-paper lined pan and refrigerate until the coating is set.
