    We tested out this recipe for Turtle Soup in preparation for an upcoming Cajun party that my husband and I are hosting. We substituted beef and veal for the turtle meat as directed but other than that we prepared the recipe exactly as written. Wow - we were so delighted with the hearty rich flavor and interesting variety of ingredients that we ate bowls of Turtle Soup for supper this evening! The recipe calls for a lot of preparation but the result is so worth it. We will definitely make this Turtle Soup recipe again and also impress our guests when we serve it at our Cajun party!
