Ingredients
  • 1 cup leftover chili or canned refried beans
  • 8 ounces cream cheese, softened
  • 1 cup chopped tomato
  • 1/2 cup coarsely chopped jalapenos
  • 1/2 cup finely chopped red onion
  • 1 cup shredded cheddar cheese
  • 1/2 cup sliced scallions
Directions

Preheat oven to 375 degrees F.

Spread chili or beans over bottom of baking dish. Spread softened cream cheese on top. Layer tomatoes, jalapenos, red onion and cheese. Bake for 20 minutes or until bubbly. Top with scallions and serve with chips

    Good stuff. I use one 15 oz can diced tomatoes.
    at first i thought it was pretty tasty.As i got into it it got better and better
    i used ellie krieger's refried bean recipe for this which made it that much more delicious!!! spreading the cream cheese is a pain, i may move to sour cream the next time i make it. jalapenos are key- nothing but rave reviews from guests for the 'kick'.
    I made this recipes for our annual Labor Day BBQ...this is the first bean dip that I have made that has been gone within minutes of setting it out. I used the recipe for Cin Chili from this site as a base however I added a can of beans...then layered on the tomatoes, and jalapenos but skipped the red onion...it was great...will definitely make again!
    This recipe is so good and so simple to make that I'm asked for the recipe all the time!
    I used this dip as a quick fun dinner for movie night at our home. We made some taco meat, and lettece to go with the nacho's and sauce....made a great quick hot meal! Fun for kids too!!
    This dip is a favorite of my family's now. They now request for me to make that when I have to bring something to family parties. I also use this dish as a meal instead of a dip. We buy tortillas and make bean burritos with the hto bean dip. Very good!!
    This dip is terrific. I only put the jalapenos on one half of it for those of us that can't handle the heat. The combination of the flavors is great. I have tried it with the refried beans and the chili on separate occassions, and they are both great.
    I've made this many of times for my family and friends. Each time I hear how delicious it is and for the recipe.
    The only good thing about this is the great smell and taste of the red onion.
    Was a big hit at a party of young people. Used refried beans and substituted the fresh tomatoes with well-drained diced canned tomatoes that were mixed w/green chili peppers and left out the jalapenos. Think next time will add black olives.
    This was not the best layered dip I have made but it was pretty good and was gone in a few minutes!!
    Made this for a recent party and everyone loved it! It was well liked by all ages! Great recipe! I did use regular Vidalia Onions, though, instead of the red onions.
    It's easy and tastes great! I use homemade chili (I always freeze some leftovers) and skip the scallions. It is very popular for parties.

    I was looking for an alternative to the standard layer dip and took a chance on this recipe. I wasn't sure about the cream cheese, but the other reviews were so good. I was also relieved to see a Mexican layer dip without guacomole. This recipe is so simple to make and it turned out wonderfully. The beans provide a solid foundation, the cream cheese offers a pleasant bite and the vegetables are great. What makes this recipe even nicer is that it's versatile; you can substitute chili for beans, add guacomole if you want it, even add or substitute milder peppers for the jalapenos. We loved it just the way it was but may play with it in the future only because we plan on making it over and over again.
    My family loves this recipe and I've turned many friends on it as well. It's a hit at every get together. Simple and delish!
    I made this for the first time and served at our house for a football game it was gone in twenty minutes. You might want to double the recipe! I also made for a last minute bbq I went to. It took me 15 minutes to make and put in the oven while I got ready. If you ahve alittle extra time use real jalepenos. Love it!
    Made this dish with left over chilli con carne and chilli beans mixed. Was ready to take it to the party and my husband taste it and wanted to keep it. Nacho layer dip never made it to the party. Very good.
