Ingredients
- 3 slices bacon, roughly chopped
- 3 garlic cloves, sliced
- 2 bunches spinach, well washed and tough stems discarded
- 2 tablespoons balsamic vinegar
- Salt and freshly ground black pepper
Directions
Heat a medium skillet over medium high heat. Add the chopped bacon and render until almost crisp. Add garlic and cook until fragrant. Add the spinach a little at a time. Toss with tongs until wilted. Add balsamic vinegar. Season with salt and pepper

I had to triple this recipe to have enough. Although, I don't think the bacon had to be tripled because of all the fat that it renders. I think that this makes an easy side dish. I liked this even though I am not a spinach lover. I hubby loved it so that means it will be on regular rotation.

Great recipe. I used link sausage instead of bacon which I diced up finely and browned before adding the fresh spinach. I used about 1.5 lbs of spinach and 1/2 pound of sausage links. Turned out really tasty!
