I halved this recipe for a dinner for 2. I used 2 slices of bacon and drained some of the fat, but one slice would have been sufficient. I also added a little spicy seasoning that Gina is always talking about. A very simple and delicious side dish.

I was in Aruba for vacation and had a wonderful Spinach salad that was made with bacon, sauteed and served warm. When I saw the Neelys make this dish on the show, I had to try it...
Wow, it was the same if not better. It took me back to that wonderful meal overlooking the ocean and sunset.

I forgot the balsamic vinegar and it was still great. I made it with salmon and it was a tasty, healthy dinner.

I wish I had smell TV....I love bacon and I love garlic, so I can't wait to try out this Spinach recipe. Such a quick dish to prepare. I recently had a hankering for some spinach but wanted to make it differently and POW there they were, The Neelys cooking some up. Once I've made it I'll be back to comment on its taste.
