Great Summer Recipe! I opted to add a clove of garlic and reduced the amount of oil to 1/8 cup. I also used roasted red peppers (jar and it turned out Fabulous!

I was looking for a salad to take to a potluck when I watched this program. I NEVER take a dish to a potluck that I haven't made before but I couldn't resist this salad; it was so colorful and looked so delicious I disregarded my rule. I was glad I did; it was very popular and, with no mayonnaise it was perfect for a hot summer day. I"ll make this time and time again!

This will be my "Go To Salad" when I'm asked to bring a dish this summer. OMG This is absolutely perfect. . .light, and refreshing. I suggest you double the recipe.
