    A little cayenne goes a long way. Should adjust 1 tablespoon to according to taste. A tablespoon of that is too much for us. Salt reduction also needed. I used 1 tablespoon. Better than frying!

    The blackening seasoning is slightly overpowered by the thyme. However, if the thyme is reduced by half or even less, it is amazing! I use it on blackened chicken as well.

    Coming from the south, where the REAL Catfish fries are; this is by far a great recipe!!! Gave it more of a kick than the tradition catfish recipe. It was GREAT!!

    I made this approximately 2 weeks ago and it was a HUGE hit. My family is from Shreveport, Louisiana and I had an impromptu dinner. My niece and her two children & my cousin. My niece called her mother, my sister who called my mother and I had two plates to go. It was seasoned perfectly and even the children enjoyed it. Now everyone thinks I'm the next food network star and I just followed this simple, tasty receipe. Thanks Neeley's. That's why I sing your praises EVERYWHERE I go.

    hey yall! i made this last night and absolutley loved it. i am from new orleans so it was perfect for my palette. But for people who are not accostomed to heat, go half on the cayenne. Also the salt was fine for me. this recipe the best yet.. and ive tried several including Emerils. I paired with roasted potatoes and my fresh raw green salad.hope this helps. luv u neelys!

    The salt in this recipe was fine for us. Maybe others are using garlic salt instead of garlic powder.
