Breakfast Trifle Grits

Ingredients

  • 2 cups water
  • 1/2 cup quick cooking grits
  • 1 tablespoon sugar
  • 3 tablespoon butter
  • Salt and freshly ground black pepper
  • 4 eggs
  • 2 breakfast sausage patties
  • Cheddar, shredded for topping
  • 1 small tomato, chopped
  • Sour cream, if desired
  • Chopped chives, optional for garnish

Directions

Grits:

Bring 2 cups of salted water to a boil. Slowly whisk in 1/2 cup quick grits, reduce heat and bring to a boil. Add the sugar and butter and salt and pepper, to taste. Reduce the heat and simmer until cooked.

Hard Boiled Eggs:

Add 4 eggs to a medium saucepan and cover with cold water. Bring up to a rapid boil then turn off heat and let the eggs sit for 15 minutes. Let cool then peel and chop.

Sausage Patty:

Place sausage patties on a preheated greased skillet over medium heat. Cook 3 to 4 minutes per side until done. Chop coarsely.

Assemble Mini Breakfast Trifles:

Spoon grits into trifle bowls. Sprinkle in cheese. Add chopped hard boiled eggs. Spoon chopped sausage on top and add the tomatoes on top of the sausage. Garnish with a dollop of sour cream and chopped chives.

    Prepared this dish for my hubby on father's day along with the Neely's peach fritters (which also were a hit) and it turned... out great. The only thing I did different was added a half cup of heavy cream to the grits for the creamy texture. I was kind of nervous about the boiled eggs and considered scrambling them however I'm glad I stuck to the recipe. The boiled eggs went well with the dish. My husband loved the dish so much he requested it for dinner a few days later...yes, dinner. This is yet another Neely hit!Read more

    Great recipe! I didn't have tomatoes so I substituted onions. It was good but next time I'll use tomatoes to balance the... flavors better. Also, layer the ingredients to match the picture and not the instructions (grits on top instead of bottom). Read more

    My daughter and I prepared this great and fun breakfast together last Saturday, it's very simple and pretty too, my daughter... added some corn beef hash to this dish and we use scrambled eggs instead of hard boiled.
