Who would have thought the combination of cinnamon, oranges, veggies and cornish hens could and would produce such a bounty of flavor...my goodness these were nothing less that a taste explosion in your mouth. The taste was amazing and made for a extra special Christmas dinner.

The show at times is very hard to watch, and did not lend credibility with me for a while, but after trying some the recipes that the Neely's make, I have learned to block out all the nonsense and focus in on the wonder food that they create so deliciously.
Keep these fabulous recipes coming Pat and Gina!

This was the easiest Christmas dinner I have ever fixed and it was a hit. Due to the large amount of Salt that was called for I substituted the Tony Chachere's Salt Free Creole Seasoning and it was perfect. My daughter whom is very particular ate her whole hen! Great recipe and very moist!

Thank you Pat and Gina. We were tired of ham by the time Christmas day came along. I remembered you making cornish game hens when your friends came to visit. I came across this Christmans recipe and thought this sounds like it will work.

My husband and I whipped up 6 of them for our get together of 8 people making only one substitution. We changed the parsnips to mini sweet peppers that we had in the refrigerator and rolled with it. When finished, we cut them in half and served them on a platter. They were enjoyed by everyone including my 11 year old autistic son who is a very fussy eater because of sensory issues! Again, fabulous and highly recommended.

Like some of the other reviewers, I attempted this recipe for the first time for our Christmas dinner. It came out PERFECTLY! The combination of flavors was unexpected but bounced around the tastebuds with ease and joy. Thank you for posting such a hit...and keep 'em coming!

I want to thank you guys for a great recipe!!!!! My family enjoyed them along with the cornbread stuffing recipe for Christmas Dinner. I was apprehensive of trying something new on a holiday, but I kept coming back to the website to make sure I did not miss anything in the recipe. We started with 8 hens and ended the night with 1 for left overs. The flavor was fantastic, my skeptical sister even complimented the meal.

We all loved the flavors - fresh orange, cinnamon, onion - it smelled fabulous while cooking. Would definitely cut way back on the salt in the rub - it was just way too much. And I think that for our family, doing large chicken breasts would work better - too much work for so little meat! Kids were not impressed! But very fancy presentation for a holiday.

We changed ths recipe a bit. We added zukini, it added a bit of green to it, and some cranberries to give it some red and some sweetness. It turned out beautiful! The juciest bird I've ever had. We also squeezed orange juice over the top of it. It was so festive, and easy! Portion control is so simple with these birds, you don't end up with half a turkey in the fridge. I wish I could post a picture! Very easy recepe, well rounded flavors, and just plain fun!

The rub on these hens is fabulous. My entire family completely enjoyed it. I did not use the vegetables, and made four hens in one pan. The cook time was about 15-20 minutes longer than the recipe. This may be because the hens were just thawed, and still very cold. I will definitely make this again, and have added this recipe to my recipe box!
