    These are really great. I gave some to the neighbors for lending me 2 eggs for this recipes and they now want to lend me all five eggs if I will make these again. I made a little adjustment to the frosting, I adding1/2 teaspoon of coconut extract and only 1 1/2 of the vanilla extract, only because I really like coconut flavor and it gave me just what I wanted- a hint of coconut in the frosting.

    I tried this recipe over the weekend and the cupcakes were delicious. I would suggest refrigerating the frosting for a couple of hours before frosting the cupcakes. As for the frosting, I only used 2.5 cups of confectioners' sugar and it was pretty sweet. I think 6 cups will be too sweet.

    Ok this recipes was amazing!! the bomb!!! even though since we live in a rentle house and all of our stuff is in storage and we don't have muffin pans so i had to make a cake. And I had to use a subsitute for cake flour. I didn't use coconut oil i used old coconut. I got fat free cream cheese by accident. I put in to much bakeing powder, and we had to go to the store to get eggs. well you get the point it was not a good day for me. Everything that could go wrong did. IT WAS THE BEST BEST BEST COCONUT CAKE I'VE EVER HAD!! Seriosly you HAVE to try this!!!!!!

    This cupcake is amazing! but the frostings a bit too sweet. I've played around with this recipe and the best thing recipe is
    1 pound cream cheese, softened
    2 sticks butter, softened
    1 teaspoon vanilla extract
    1 teaspoon coconut extract
    4 cups sifted confectioners' sugar
    I'm telling you that this is the best recipe for the frosting.

    These are the best! My family loves them and we have them for many different occasions. I frost them with 1/2 toasted and 1/2 plain coconut; also some without any coconut.

    I normally don't rate recipes, but i'm from trinidad and loves anything coconut, this recipe is the BEST recipe ever. I made these cupcakes about ten times within a year for several different people and they all loved it.

    I made these last night and I thought they were dry. I did use regular flour instead of cake flour. Could someone tell me if that would make a difference. I also did have alot of frosting left over, I could not see putting that much frosting on. But they were good. I would make these again if I could find out how to make them alittle more moist.
