i will not do this recipe again! the cupcakes were not only flat but would fall apart when taking out of the pan. I asked my husband to taste them and his comment was they taste too much like eggs!

These were the most delicious, moist cupcakes I have ever had! Pretty easy to make, and no catastrophies other then I think I put too much in the cupcake papers and they overflowed a little onto the pan. I decided to not toast the coconut on top, and they were just as good covered in regular coconut. And they held their moistness for at least 4 days, and even the last few were just slightly dry.

What happened? I followed this recipe to a "T". I even watched it on TV. I creamed the butter and sugar, put eggs in one at a time, I sifted my dry ingredients and I even used "cake flour" like the Neelys said. But what I got was a batter that rose up fast and ran over and spilled in my oven causing black smoke to pour out. I continued to bake them even after the run over and the batter would not rise up. They were just sad brown little hard cupcakes. They tasted good but they looked like crap. Flat on top and hard. What happened? My measurements were right, my baking powder and soada were brand new. I was hoping for a wonderful Christmas treat, instead I got a bad memory of a house full of burnt smoke, a filthy oven and no Christmas dessert for my family! What went wrong? Any help? Any thoughts?

I thought these were a cute novelty for Christmas - kids loved them, even without the toasted coconut. I would suggest only making half of a recipe of frosting - even then, I had more than enough to cover them very heavily - can't imagine doubling that! Thanks Neelys, for another fun, informative show!

Congrats on your great show. I love watching you guys work together in the Kitchen, and just the environment you give off together is so awesome!!! There is definitly and obviously a lot of love between you two, congrats!!!!

ok well i'm not a great baker, even with out of the box cakes somehow they come out wrong...with this recipe well....definitly user error!!!!

first I put 1/2 tsp too much baking soda....then my first batch of cupcakes caved in the middle, the second and third batch i used the reynolds star molds...so those didn't turn out too bad...well the presentation I mean the taste is awesome!!! Anyway for the frosting i split it in half and used green and red food coloring to give it that extra Christmas feel....

so just want to say thank you for your show, all of the foods you make are great...and this one is not exceptiong!!!! :

First, I adore your show and your food always looks delicious.
I tried this recipe with my 15 year old nephew and we both loved the cupcakes. This is a very easy to follow recipe. Thanks for giving me a gift that I could share with my nephew. That time baking together in the kitchen was priceless. Merry Christmas Neely Family.

I halved the batch because even though I make great desserts, they don't get eaten! By the time dessert rolls around, everyone is too full from dinner still! Well, I cut the recipe in half and only made a dozen- I should have doubled the batch! These went so fast! And I had to resist the urge to hoard them and eat them all myself!!!! And with being pregnant, the urge is DEFINATLEY there! Christmas isn't even here yet, and I have to make more again for dessert after dinner!

    Jeanna,
I must tell you that I was determined to make these cupcakes. I recorded your show twice and when I got ready to bake the cupcakes, my husband had erased the show. Not to worry girl because I went on line. My ten year old son and I went to work. The cupcakes are delicious and very sweet. My son tried to lick the bowl ,the spoon, the mixer, you name it he licked it. The cupcakes came out nice and brown and fluffy. We ate half a pan before we could get to frost the rest. I was really feeling down before I tried your recipe but thanks to the Neely's I'm beginning to get into the Christmas spirit.
