For a long time, my husband and I wanted something outside of the usual pasta and rice for dinner. It is a new item in our grocery store, so I jumped on it. It's easy and tastes great; even got approval from our 3year old daughter. Easily a new staple in our house!!

I made this dish for my family and they loved it. But instead of cooking my couscous in plain water I used chicken broth and double the garlic.

I served this recipe as a side dish with some spicy navy beans and some collard greens to a vegan guest who ljust oved it! The dish is subtly flavorful and the garlic & red pepper set it off perfectly. And the ingredients were just what I had on hand! Great recipe!

To the Neelys:
Thank you for this delicious recipe! I made it last night after viewing the show, and it was perfect the zucchinni and the other ingredients and quick too!! This is my first time cooking and tasting couscous and I'm in love with it. I am from Puerto Rico and I'm wondering if I can replace some of my rice dishes with couscous -- maybe? That's a thought!

I made the couscous tonight to go along with the pork chop recipe from this episode. My husband was hooked just by the aroma of it cooking and we both loved it with the pork chops. The zucchini adds flavor to the couscous, but the lightness of it is perfect to cut the heat from the pineapple salsa. Easy to make and delicious to eat!

I followed the recipe and then added Feta cheese after it cooled slightly.
It is wonderful as a cold side dish as well. The cheese really added an extra level of tartness to the other wonderful flavors. We served the couscous with grilled pork loin and Red Hots hotdogs and also had a creamy coleslaw as a side. Truly a versatile dish that holds its own with the Neelys ingredients or the additional ingredients you want to add for extra appeal.

I used a garlic and olive oil flavored couscous and while this recipe calls for 10 oz.- the box was 5.8 oz. I used the amounts required in recipe for all other ingredients and it made it really yummy! A nice spicy taste but not overpowering.
Great recipe!!!! Nice compliment to the marinated pork chops w/pineapple salsa!

I was looking for new recipes to use the fresh zucchini from my garden in and thought this looked good. WOW the BEST couscous I have ever made!! I kind of combined this recipe with another couscous and zucchini recipe I found on foodnetwork.com. I added fresh tomatoes and cilantro and a little more olive oil at the end when I mixed everything together. I LOVE, LOVE, LOVE this recipe! You will not be disappointed at all. I did not like the couscous recipes I have made before but this changed my mind.TRY IT!!
