The zucchini is definately the best touch to this recipe. I also used the toasted pine nut couscous for added flavor. I wish I would have added the mint I think it would have perfected this. I also added shrimp. Delicious and will make again also because its so healthy and yummy.

I made this tonight and loved it! It gave both the couscous and the zucchini a great flavor! I didn't have green onion or mint and it still turned out fab!

This was a delicious and easy dish! We decided to use the Near East brand Pine Nut flavored couscous. Also, we left out the mint because in Michigan it does not come in bulk, hence it would be difficult to use the leftover bushel. Additionally, we added garbanzo beans to the dishe near the end for additional protein. My baby did not add parmesan and asiago on top, but I did, and it added a nice flavor.

This was the first time I had ever cooked or eaten couscous and it was fabulous! My husband kept going back for seconds. The mint really adds a unique and fresh taste to the dish. You really "kicked it" with this one! Keep it up!
