This recipe is a staple at our house during the summer months! So fresh and light but filling - we never tire of this. Note - personal preference, I add feta - awesome!!!

Delicious! Absolutely loved it! It makes A LOT too, so be prepared for a lot of salad. Will make again and again! Didn't have creole mustard, so used dijon and was fine.

I got rave reviews when I made this for my family. It's a perfect alternative to the boring old green salad. It's perfect to bring to potlucks, too. I did make some changes to the vinaigrette by using balsamic vinegar instead of the red wine vinegar and I didn't use the mustard. But the red pepper flakes are a must! They give it that wonderful little kick that makes your mouth go "wow".

Colorful and delicious! At first I was skeptical of the dressing, but once I mixed it up it was really good! I didnt have creole mustard, so I used dijon and some red pepper flakes to spice it up.

This is the first recipe from Neely's I tried. I am glad I did, though with a couple changes. Used green bell pepper (had it handy! instead of red/yellow..and topped with fresh chopped mint leaves!!!! so colorful and YUM!

I had to cook dinner for my new in-laws for the very first time. Of course, I needed to impress them, so I made this quick, easy, and very colorful salad. It was a huge hit! Everyone went back for seconds--best compliment you can give a cook.

Absolutely loved this salad as directed. The flavor is light, the veggies cool and crisp. A perfect side dish to chicken, burgers, ribs virtually any summer meal.
As I was eating the salad feta cheese popped into my head, and although the flavor was a delightful addition to the salad, I wouldn't feel the need to add the cheese because you can't beat perfection. Thanks Neely's, this will be on my list of go-to summer recipes.
