I used the recipe from the book with the white cheddar (I couldn't find the sharp, substituted Asiago cheese for the Pecorino Romano, and this was the best I had ever had. Because of the cost of the white cheddar, I plan to make it with the regular cheddar next time. Only drawback - I had a lot of cleanup work to do in the kitchen.

YO I AM NOT MUCH OF A COOK, SO WHEN I SEEN THIS RECIPE ON TV I THOUGHT I'D TRY IT FOR THE HOLIDAYS AND I FOLLOWED THE DIRECTIONS TO THE TEE, AND I'M TELLING YOU THIS MAC N CHEESE IS A ONE OF A KIND DISH. DOESN'T TAKE MUCH, JUST A LOT OF CHEESE, AND THAT'S ALRIGHT WITH ME, I ADDED A BLOCK OF VELVEETA CHEESE TO IT AND IT WAS OFF THE CHAIN. I WILL BE MAKING THIS DISH FOR THE REST OF MY HOLIDAYS. ONLY THING IS I WOULD POUR THE CHEESE OVER THE PASTA INSTEAD OF PUTTING THE PASTA IN THE CHEESE SAUCE, CAUSE THIS DISH CAN BE VERY CHEESY, AND ALWAYS USE JUMBO ELBOW PASTA OR SOMETHING SIMILIAR. BUT THIS DISH AIN'T NO JOKE.

This mac and cheese was good. I really did like the cayenne and nutmeg flavors. I would add more salt though, maybe about one teaspoon.

I have tried several of the Neely's recipes and must say this is the first time I was disappointed. I followed this recipe exactly and must say it was very bland, although the bacon/chip topping was good. If trying this recipe add more salt, cheese and less cayenne pepper----was also very spicy.

Sorry Gina, this recipe had hardly any flavor at all. It was a waste of my money and a big disappointment on Christmas day. What could I have added to this to give it flavor? I've tried several of your recipes and they have never disappointed me in the past. I would not make this again.

my family loved it! i used the 5 cheese mix instead of the fresh parm which is very expensive, came out very cheesey and with a kick! kids like the potato chips and the men love the bacon....

I have made this recipe several times, and have modified it to my taste each time. It has always turned out delicious, and I am a southern girl who knows good mac and cheese. My boyfriend also loves it.

My 8-yr old has never liked mac and cheese....until this one! I prepared it last year for Thanksgiving and he just loved it! When I asked the kids what special dish they wanted for Christmas dinner, he screamed out "the macaroni and cheese with the chips and bacon". What a change. I'm so excited that he's not as picky anymore!

This was a great recipe: could not eat enough. we did not use potato chips, which seemed over the top. Did top with bacon bits and followed the recipe as is. Make sure to bake enough for the perfect crust. Will definitely make again. Not your usual bland mac and cheese.
