    I have been making cinnamon rolls for years and my recipe calls for 2 pkgs. yeast. It has to be the right temperature or it won't rise. I use a therometer that is for meat and yeast.
    If the yeast is good it will make a header and I always put a tsp. sugar in mine. I let my rolls rise on a heating pad on low.

    I always found this info to be helpful when using yeast. It really takes the guess work out of the process. Hope its helpful.

    Thank goodness I only made 1/2 a recipe. A - they didn't rise & my yeast was fine & think the amount was off. Could kick myself for not reading the reviews 1st - because it is off. They were a bit on the tough side. B. Not the nice fluffy type that were shown on TV. I did try another recipe from the internet Cinnamon Rolls in less than 2 hours & those DID work, nice & fluffy.
    Live & learn I guess.

    I used the suggested amount of yeast however I waited an hour and my dough didn't rise. After waiting a long time, I made the filling and rolled out the cinnamon rolls and they sat in the tray for over an hour waiting for them to double in size... but that didn't happen. Any ideas of what went wrong? Suggestions for anyone who had success?

    Charlene and Jennifer,

    You are both right about the yeast measurement being off. Likely they just meant 2 packages of yeast, NOT 4 ounces.

    If your dough is not rising there are 3 possibilities:

    1.Your yeast was dead when you started. Did it bubble up in the water?

    2. Water was too hot and yeast was killed.

    3. Location for dough rising too hot or too cold. Yeast is very particular about temperatures. Too cold and it will just sit, too hot and it will be dead in a flash. 100-110 Fahrenheit makes it very happy!

    I'm with Charlene in VA....I think the amount of yeast is incorrect. I used 2 packages (1/4 oz each of Fleishman's Rapid Rise....and I too am still waiting for the dough to rise and it has been 45 minutes.
    I would probably add some sugar to the yeast mixture as I typically do.
    I also substituted 1 C plus 2 T cake flour for one of the cups of flour to hopefully make a lighter consistency....We'll see. I hope I don't have to throw it all out!

    I have tried dozen of diffrent cinnamon roll recipes, and thought I had found the perfect one till I tried this one this is by far one of the best. Thank you Pat&Gina for a real down home recipe! A must try recipe.

    First item on recipe was 2 (4 oz. packages of yeast. I don't even think you can disolve 8 oz of yeast in 1/2 cup of water. Used 2 (3/4 oz. packages and am now waiting for dough to rise. Has been 45 min. and dough is flat as it was when first put in. Am I missing something here?
