    I loved this dish!! Boneless/skinless chicken breast is what I used and found it to be a bit dry, so- the second time I marinated the chicken and it was fabulous!! used extra cayenne pepper for more heat

    I'm the cook at a small private school and made this for lunch a week ago. The students and staff loved it!!! It was so flavorful and crispy without the oil you get from frying. The bottoms weren't mushy at all with the chicken on the racks. I've already gotten requests from teachers and staff to make this again. I know it'll be a regular on our schools lunch menus. Thanks Pat and Gina!!!

    I love cooking with Panko bread crumbs and was excited to try this recipe. Unfortunately, I had the same problem as others--the bottom of the chicken was soggy, but it was still a delicious recipe. And I will plan to double the spices next time around as suggested by other reviewers. I was hoping for a little more spice than I achieved following the recipe. Oh well, there is always next time--can't wait!

    I made this the other day and like others said the spices in the flour mix really made the chicken good. My only negative was that the bread crumbs fell off and were messy. but that isnt the fault of the recipe. I will definitely make it again. It was for only 2 of us so I just used 4 pieces of chicken. I will make it again and maybe next time, I can keep the bread crumbs on it.

    Besides the bottom being a little mushy, overall, this was a great recipe. I totally agree with doubling the spices except for the paprika. Will make again.
