I had the opposite experience! I wasted 3+ pounds of pork tenderloin and we couldn't eat it! I don't know why they suggest putting the orange and lime rind in with it while cooking because I believe that is what caused it to be so bitter. I followed it to a "T" but it really was bad and my husband refused to eat it after one bite. Very tender but not edible unfortunately. I did make the chips and they were wonderful. As for the salsa, I only used 1/2 of the red onion and it still was too oniony. I love watching the Neelys but unfortunately this one gets two thumbs down.

I made the tacos, the salsa, the mexican rice and the zesty slaw. Since I don't eat pork, I used chicken breast instead. Everything was terriffic! The meat was so incredibly flavorful. The longer it cooked, the more tender it became. I WILL make this dish again. Thanks, Pat and Gina.
