This breakfast casserole is fantastic! My whole family went nuts over it and I found the recipe to be very versatile. Zucchini subs well for the leeks and just about any kind of sausage (like chorizo... could be used. In addition, ethnic seasonings can be added to give it a mexican, italian, or creole bent.

DELICIOUS!!! I had leftover leeks that I wanted to use and found this recipe. Made it the night before and breakfast the next morning was a hit with everyone. The leeks really have a terrific mild onion flavor that goes perfectly with sausage. Definitely will make this one again, and again!

I've made this recipe as is many times and always get A LOT of compliments. If you use a square baking dish, you're fine with the liquid mixture, but you probably won't use all the meat. If you use a rectangular dish, then you'll need a few more eggs and a little more milk.
