My favorite version of mac and cheese. This has become a Christmas dish tradition at our home. Wonderful mix of cheeses and chorizo.

I'm sorry but this recipe was awful! It would have been okay if I had stopped at the plain old mac and cheese (ok, not great but adding the chorizo and tomatoes made it inedible. I made a double batch for a party but I couldn't bring myself to serve it so I tossed it all! Don't add the meat and tomatoes and maybe you'll like it!

Loved it, first time cooking with chorizo and wasn't sure what I wanted to do with it. So glad I found this recipe. It was even better (almost the next morning as a snack. I also omitted the hot sauce because of our toddler and used a large can of drained diced tomatoes that I seasoned with some salt and pepper. It was super!

This is a nice change from everyday homemade mac/cheese. I never used chorizo before, and it's very good. We omitted the hot sauce for our taste, and used a can of diced tomatoes instead of the cherry..because I didn't have it. Turned out real good.

My mother-in-law and I made this recipe for an alternative side dish for Thanksgiving a few years back. It was fantastic!!!!! I tried making it a while back, but ditched the dish after browning the chorizo. It seemed really funky, so I didn't want to risk getting my family sick. Last week at a great market we have here in San Antonio, they were selling chroizo made in store without preservatives, nitrites and nitrates. I snatched it up ready to make this dish. I am going to fix it tonight and have it at lunch tomorrow. If you are on the fence about this recipe, don't hesitate and give it a try!

My family loved it! I had to make a few changes for the kids- I left out the hot sauce, tomatoes and onions- which probably would have made it even better, but I would have been eating alone. PS- In NJ, you can only buy one kind of chorizo and it only comes in one kind of "package"- it's 1 lb. However, I would think you could add more or less, depending on how much you want, and use any kind you like- it would not change the consistency, so it wouldn't matter!

I agree with Randy,,,,define Package? I am preparing to make this recipe and I guess it will be a guess as to what a package of Chorizo Sausage would be.

This is the first Neely recipe I have made and we loved it. In addition, I shared it with my mother-in-law as well as a friend who is on the search for the best macaroni and cheese and it was a hit with all. I wasn't able to find chorizo, so we used smoked sausage instead and it would a good combo. Next time I'm hoping to find it. Thanks Gina & Pat for a real keeper. PS...It was even good warmed up.
