    I have been a great fan of the Food Network for a few years. I stopped for the last couple of years and returned in November 2008 to locate recipes for the Xmas holidays. When I saw Gina & Pat for the first time and viewed the chemistry between them it was such a delight. So was the Spicy Macaroni and Cheese with Chorizo Sausage. From my experience with the recipe everyone one (at least seven dinner guest said it was the best Mac & Cheese they ever tasted. That compliment I pass to the Neelys. In retrospect I recommend increasing the amount of cheese sauce ? for the penne pasta greatly absorbs it and traditionally folks love more sauce with their pasta. A recipe well crafted.

    LOVED the recipe, however, I would either use less penne or more sauce next time because the pasta soaked most of the sauce. I love the show, recipes, and best of all the hosts!!!!!! Will make this dish again.

    My dinner was a success. I did and I believe everybody enjoyed the macaroni and cheese.

    My mom and I were changing channels and I did not realize we had Food Netwrok. We are you #1 FANS

    What a GREAT mac & cheese, it was fantastic!!! I made this around New Years for a party I was going to. I made it a day ahead and just stuck it in the fridge. Making it was wicked simple, very easy, and straight forward. Assembly was easy and the thing weighted a ton so I knew it was going to be good!! We baked it up and dug in with some smokin' hot wings for supper. WOW it was great! Between 5 people we ate about 3 quaters of the pan and I took the rest home for work lunches. It was still fantastic a couple of days later! Pat & Gina, you hit this one out of the park! This mac & cheese is crack-a-lackin' good!! I'll definitely be making this again!!

    I made this dish for Christmas dinner and it was fabulous! I'll probably leave out the tomatoes, didn't do much for the taste of the dish, but it did add some nice color. I might try adding the chorizo throughout the dish instead of just on top, then you get the spicey punch throughout the dish. And I also forgot to add the onions on top...oops! But it was super and great for leftovers, too!

    I saw this recipe on tv the other night and the ingredients sounded fantastic. There are a lot of ingredients in this recipe, so don't expect a light mac n cheese. I added bacon to the dishes and unfortunately, the flavors did not complement each other very well. Very intense flavor and very heavy, but it was hard to distinguish what exactly I was eating. I will definitely give this recipe another try!

    I tried this recipe tonight and WOW was it delicious..I couldnt find Chorizo so I used Canadian bacon...(that was the only change It was awesome and easy to do..The NEXT time, I will be using Chorizo..and I will add this was my first time ever making real Mac and cheese..now I am no longer afraid!! Thanks guys!!!

    I am making this for the second time. It's great fresh and leftover. I even froze some the last time and that was just as delicious! I used Linguica instead of Chorizo. That's a mild Portugese sausage, in the casing, diced and fried. Everything else the same. Fabulous! Very addicting.

    I actually tried this for the first time when my mom made it and sent some of the leftovers home with me to reheat. My husband and I enjoyed the reheated leftovers so much that we decided to make it fresh for ourselves. We added some red pepper flakes and for us that made it perfect. It is going in my keeper box.

    This was a pretty easy recipe to follow. I'm not one for lots of steps, but this was simple. It was a delicious dish! I would give it 4.5 stars if I could...my only thought would be to add some more spice. It did have some 'kick,' but when I reheated the leftovers, it wasn't quite as spicy. But it's still very, very good! We'll be making this one again for sure!
