    I absolutely love these! I have made them several times. My husband doesn't care for goat cheese so I have substituted with cream cheese and it works just fine. The tangy goat cheese and sweetness from the sweet potatoes pairs very well with the smokey chipotle sauce.

    Made these for my family last night. Everyone loved the dipping sauce AND the empanadas. I never would have thought of mixing these ingredients together! I felt very brave, however, and went for it! SO yummy!! I agree, cream cheese would probably work just fine. I'll try it next time I make them.

    I made the empanada recipe for a Cinco de Mayo celebration we had at work today. I remixed teh recipe however by switching the wonton wrappers for pie crust instead as I was also making beef empanadas and had purchased pie crust for that. I don't typically eat goast cheese and had to ask at Harris Teeter where to find the different types but I found a delicous cranberry and cinnamon goast cheese that I thoguth would bring out the flavor and sweetness of the sweet potatoes. I also added the whole pack (it was a small pack however. I also baked them instead of frying since I used pie crust (when I tried frying one the crust was just too flaky and broke in my hands when I tried to eat it. They tast delicuous and was an interesting twist, everyone at work loved them and I would make this recipe again but would try it with the wontons instead this time. I also did not make the sauce this time but will have to try it. I enjoy watching the show and look forward to trying some of the Nee.ly's recipes!

    I saw the neelys make this and thought that I had to try it. It definitely is different. The contrast of flavors with the empanada and the dipping sauce is good. If you dont have goat cheese, I think cream cheese would work just as well in this recipe if not better. These are both sweet and savory at the same time. Good recipe.

    Easy to make and great taste. The sauce was so good I will be using it with other recipes. The only change I will make to the recipe for next time is to add a little mositure to the mix, maybe a small amount of chicken broth or sour cream.

    These were okay- I feel like their should be a dipping sauce to go with it. Or some sweetness to balance the goat cheese.
