    I modified the steps a bit. I did the recipe as follows the day before. Although I discarded the skins. I put the potatoe mixture in ramekins and heated up the next day for my guests. I love the idea of make ahead recipes for the holidays and all you have to do on the day of the holiday or event is reheat. Hello! my kinda recipe. It takes just as good as it would if you followed it to a tee.

    I may add some crumbly topping at Thanksgiving but not sure yet. Thinking like and oats, butter, light spice, pecans, or maybe just toasted marshmallows?

    I like it because it takes great and it can be adapted to a persons lifestyle.

    Ok guys, this is what I did, although I kind of cheated. I tried to take the skin off three potatoes but by that time I was so frustrated that it was not coming off properly that I actually just ended up mashing the three potatoes that I had peeled into the cream/spice mixture. And man it was good! I am going to try again to see if I get it right, but it still tastes great as regular mashed sweet potatoes with the cream cheese and spices....

    I made this recipe a few weeks ago (making again tonight which is why I'm back here and made it exactly as stated except I adjusted the ingredient amounts up about 20% to account for the (very large sized sweet potatoes we had that day.

    Everyone enjoyed this dish - even I did; my wife is the sweet potato fan but I normally skip them. Our kids also usually split on sweet potatoes with 2 liking them and 2 not. But all 4 really wolfed these down.

    For those having some trouble with the skins, after washing and drying the potatoes I lightly oiled them with olive oil which I think may help firm the skin somewhat. Also, I tried to leave about 5 millimeters of potato all around the inside as a shell.

    I have been wanting to try this recipe for a while. Ever since I saw the ingredients I thought how would this be bad?? Well, I made it tonight and was somewhat disappointed. I followed the recipe exactly, as I would normally do the first time making something and it was off key. I did not like the taste and was not impressed. I will not be making this one again. I think the old fashioned baked sweet potato with real butter can't compare to this one.

    My husband who has always taken a firm stand against sweet potatoes ate this like it was ice cream!! I didn't try to restuff the skins, I cooked mixture in small casserole dishes, I garnished them with pineapple chunks and raisins. Can't wait to have the leftovers today!!

    I was never a big fan of sweet patatos. But this recipie changed my mind. It was so good. The best sweet patato I have ever had.

    I am currently 7 1/2 months pregnant and got an incredibly strong craving for sweet potatoes. I went looking for recipes and found this one. I was little unsure about eating a sweet potato with cream cheese mixed in. However, when I tasted it, I was floored. I only made one for myself, so I guessed when mixing the ingredients. It was creamy and delicious! My husband was a little freaked out by the cream cheese!! This will definitely work for Thanksgiving 2009!! Um, um wonderful (and not just because I'm pregnant!!!

    I made these potatoes for a big family dinner. Everyone went crazy over them, even my children and they are picky. I would definately make these over and over again!!

    I asked my hubby to pick up sweet potatoes while at the store. I didn't say fresh so he bought canned. I used the filling recipe and baked in single serving agratin dishes and topped with some crushed pecans. The flavor was wonderful and my picky grandsons ate 2 dishes each and told their Dad I had made the best pumpkin pie. Now I have a back-up plan for a side dishes. Thanks Gina and Patrick you saved the day again.
