New Potato Salad

Ingredients
  • 3 pounds new potatoes, cooked
  • 4 eggs, hard-boiled and sliced
  • 3 tablespoons coarse-grain mustard
  • 1 red onion
  • 4 tomatoes, peeled, seeded, diced
  • 1/4 cup chopped celery
  • 1 tablespoon chili powder
  • 1/2 cup olive oil
  • 3 ears corn, roasted and shucked
  • 1 poblano chili, minced
Directions
  • In a large bowl blend all ingredients. Season with salt and fresh cracked pepper. Garnish with chopped parsley if desired
