    I only had smoked mozzerella on hand instead of fresh, so I used barbecue sauce in place of the ketchup for a smoky spin on these. Delish!!

    These were very easy to make, and was a hit with my kids. I have never added ketchup to a twice baked potato, but it was great, and my kids wanted them even more since I was feeding them what they saw as fast food. Since it's healthier than fast food, I feel more comfortable feeding this to my children instead of depending on the drive-thru.
