This wonderful recipe has become a weekend staple. My husband just loves them and the two of us can eat the entire batch. I find it really makes about ten 4? pancakes. I've made a few modifications along the way. Depending on our mood, I'll add cinnamon, blueberries, chocolate chips, a bit of flaxseed or dash of almond extract (it adds a little something extra w/o tasting like almond. I?ve also substituted brown sugar for white. I also took the advice of another post and add a 1t. of baking powder if I want a lighter pancake. If I want to cut down the sugar, I half it and add Spenda. It's a pretty flexible recipe. Can't recommend this enough and it almost feels healthy.

I really enjoyed these "cakelets" god for tasty protein, and east. I even ate the leftovers cold and they were still good.

These are the only pancakes my family will eat now. They don't even use syrup-just the strawberries.

I am a personal trainer and normally don't make Nigella's recipes - but this one looked relatively healthy. I used whole grain pastry flour to add a little fiber (I didn't use whole wheat flour because it would be too heavy. These pancakes were DELICIOUS! High in protein and very filling - I will definitely make these again!

After watching Nigella make these I went straight into the kitchen to make the cheesecakelets. My 4 yr old and I loved these. Very easy and fast to make along with a light fluffy texture. I used an electric mixer to beat the egg whites. We made them silver dollar size and topped them with the strawberry mixture, confectioners sugar and maple syrup.

I really liked the strawberries with this dish. It wasn't difficult, either. I was expecting more of a cheesecake flavor, but nonetheless, the pancakes were really soft and the cottage cheese did get nice and melted.
