    Wow these are a perfect blend between cake and eggs. So light but substantial. I swapped ricotta for cottage cheese and used almond flour instead of wheat flour and stevia instead of sugar. Great stuff and easy to do. Wow is all I can say.

    I hated cottege cheese pancakes as a kid-these are FANTASTIC!!!!It's like eating little cheesecakes for breakfast.

    I make these for my 2 small children and husband all the time...and not just for breakfast. We had them tonight for dinner when my 2 year old asked for Pancakes. I make them with whole wheat flour and cut the sugar in half. I also double the recipe and I never have left overs. They're outstanding!

    By far one of the best breakfast/dessert dishes. I made tiny cakes and added a dab of creme frache with a piece of fruit (half a strawberry to garnish. Went over very well!

    My family liked the flavor. The cottage cheese melts and becomes stringy. I added baking soda to fluff them up. I only used 2 eggs and added a bit of milk.

    My sweetie and I have a Sunday morning ritual...I'll leave the first part to the imagination, but the morning is finished off with something fabulous for breakfast...something different and off the beaten path...we love our Sunday breakfast to be an "experience". This recipe was quick, easy and so not ordinary !!! We both loved it...Love the show, too. Nigella is also.."so not ordinary" !!

    Using cottage cheese isn't something I've put into pancake batter, but I will from now on. Made very light and soft pancakes.
