I just made these for the first time and they turned out great. As other reviewers have mentioned, the texture is different than traditional cupcakes, but different isn't always bad. These little babies stayed moist and light and were enjoyed by all.

I added a little peppermint flavoring to the icing. Yummy with chocolate cupcakes.

These were more like vanilla muffins than cupcakes, but they were still very yummy! I don't have a food processor so I used a hand mixer and they turned out fine. I didn't make the icing because it scared me a little, so I just made a butter cream which was good becuase it was super sweet on the cupcakes which wern't very sweet. I only baked mine for 15 minutes and they were a little over done, so I would recommend keeping an eye on them after 12 minutes. Next time I think i might throw some chocolate chips in the batter and use chocolate icing.

Very easy to make. If you don't have a food processor, an electric hand mixer is just fine.
A little leery of the frosting on the day I made the cupcakes. The next day the frosting is fantastic! No complaints here from me or my "guinea pig" colleagues. They love them!

Made these one cold winter afternoon with my 5 yr old, who begged for cupcakes, but I didn't have a box mix. This was a great substitute, using basic ingredients that most people would have on hand. Gave it a 4 only b/c I did not use the icing part of the recipe (as suggested by some others. However, like the actual cupcakes VERY VERY much. 14-15 minutes was enough time for them to turn golden in my oven. They came out really light & fluffy (perhaps b/c I made them by handmixer & not in a processor? They are still cooling, and my daughter has already eaten 2! Overall, 2 thumbs up!

The flavour of the cupcakes were good but mine had long air tunnels in the middle and was got a little tough.

Cupcake itself, good. This is royal frosting not a normal cupcake frosting. this one is used to bond cakes together not to top it! The best is buttercream all the way.
