This meatloaf was absolutely delicious. It's not super fussy with a billion ingredients but relies on a few simple ingredients that really deliver on flavor. I couldn't find duck fat and didn't have the time to hit any of the fancy local grocers to look for it but using the butter the onions turned out sweet and melty. I took one reviewer's advice and used good quality bacon, which was definitely the right idea. The meatloaf was moist and fantastic and the bacon was crispy and really yummy. I've made several meatloaves and my boyfriend declared this the new standard!

This has to be the best meatloaf I've ever made!!! I had to use butter instead of duckfat but it didn't matter-it as easy to make, a great any night surprise-the eggs had almost a creaminess the was delightful. Thanks Nigella-my husband thinks you're the hottest thing on Food Network!!

I will make this in about an hour. @ chef Lannie FYI you can buy duck fat from d'artagnan. many high end markets carry it...if not you can buy it online. OR you could render your own!

ONE WEEK LATER...JUST FINISHED A SANDWICH OF THE LAST OF THE BEST MEATLOAF WE HAVE EVER EATEN...THANK YOU NIGELLA, ED AND ED'S MUM!

I missed the beginning of this epsiode. Where did she buy the 'duck fat'? Can it be purchased? Or did she actually roast a duck and save the fat??? Thanks

It's irritating to read the gal's review who said this recipe turned out to be a greasy mess. It was fantastic! I'm assuming she forgot to add the bread crumbs or something. It was perfectly moist and very delicious! My only trouble was I used cheap bacon. Next time I'll use higher quality and it will be perfect! Thanks Nigella!
