I made this recipe, incorporating the suggestions for a little cayenne and more tomato paste.

It was still pretty dreadful. The ginger and onion flavors tasted raw and overpowering.

I was able to resuscitate it a little by adding a half-cup or so of milk at the end to take some of the raw edge off. Yogurt would have been better, but I didn't have any in my fridge.

That was enough to make it edible, my husband and I decided. Just barely. We were seriously considering tossing perfectly good food otherwise.

As written, this recipe simply didn't work. I have used Nigella's recipes before with success, but this one was just bad.

Can one become addicted to paneer? I think so. I made this dish shortly after seeing it on the show and now make it all the time. Found the best way to fry the paneer is in a deep fryer; that way it doesn't spatter all over the kitchen. I make it exactly the way the recipe states except for perhaps adding a bit more tomato paste, and wouldn't change another thing. It has become a mainstay in my recipe file.

While this recipe is good, it did not have enough tomato taste to it. It also seemed to more oily than I'm used to. Despite this,I would definately make it again. My changes would be to increase the tomato, try to reduce the oil, and reduces the amount of ginger ( I was too generous last time.Another review suggested adding some flour to the sauce and I'm going to do that also.

If you have a food processor to make the paste, this is a very easy and delicious indian side dish to make. I did not use any oil to fry the cheese.
Make sure the cheese is the frying kind.
Will definetely make it again and again.

According to a vegetarian friend of mine who claims that Muttar Paneer is his favorite food there is not enough tomato flavor in this recipe, so after trying the dish with the original amounts listed we increased the amounts of tomato paste to one small can and then increased the vegetable stock to 2 cups. We both proclaimed the dish delicious and plan on making it this way from now on.

This dish is normally very tasty, but this particular recipe is missing something. The restaurants typically serve this dish with more of a creamy and flavorful sauce, which this recipe does not seem to provide.

I saw Nigella make this and the other Indian dishes on TV and was inspired to try them. I had most of the ingredients on hand, except for the paneer. I subbed out the paneer for small cubes of sweet potato and found it to be quite nice, if not exactly authentic. From what I read of the other reviews, the sweet potato was much easier. Just added it in with the peas and liquids and simmered for about 15 minutes. An excellent vegetarian if you also sub the chicken stock for veg.

Muttar Paneer is my fave Indian dish. This recipe is pretty good as far as taste goes, but I don't like the texture. Muttar Paneer is supposed to have a smooth creamy sauce, this turned out to have pretty much no sauce and it was definitely not creamy. I'm thinking pureeing the veggies, adding a little more of the liquid ingredients, some hot sauce and some flour to thicken the sauce might work better.

I will definitely be making this again. Next time I may even try with spinach for a saag paneer. This recipe was perfect for us vegetarians. Since we couldn't find paneer I used haloumi cheese since it's a nice sturdy cheese for frying and has a great salty contrast with the sweet peas. I served it with the accompanying Mughlai Chicken on this episode but used seiten instead of chicken. YUM!!
