I had no star anise, so I omitted it and used angel hair. This was quick and delicious! I made it again and "cleared out" my veggie drawer! The fresh cilantro adds so much to the dish!

I made this the very night I saw it on TV. I call my Niece who is half Japanese and ask her about the Dashi....Bottom line I did not find it in a store near by BUT, made it with the chicken broth and added pulled roasted chicken. My family loved it and I have given this recipe out to a lot of people. And to Lotussm50 I don't think she was trying to make a Dashi out of brown sugar and such that would been have in it anyway! Sorry you didn't enjoy the flavors my family did :

I just made this for dinner tonight and really enjoyed it. I did, however, make a few modifications such as using half veg. broth and half water (the broth by itself was a bit strong for my taste. I also added a couple more tablespoons of soy sauce than called for, and for extra garnish (and a little protein and crunch, I added some chopped peanuts right before eating. It was delicious!!

Similar to Pho in many ways. I've made Nigella's "needy soup" several times, usually using chicken broth. Last night I used a 28-oz can of Pho beef broth, along with veggies and noodles. I used 4 star anise and let them steep in the cold broth for about an hour before I started cooking it, because I love the flavor and find 1 or 2 not sufficient. Nigella's soup is excellent, easy and allows you to experiment and customize to your own taste. Thanks, Nigella!

One wonders if Nigella has ever had real Dashi! She says with this soup that she tries to emulate Japanese Dashi by adding brown sugar and star anise to chicken stock! What, is she crazy? Star anise?? Sugar?? Chicken?? These are supposed to be quick and easy recipes. Nothing is as easy and convenient as making a simple Dashi. Why doesn't she just make Dashi the way most Japanese do -- either instant Dashi powder (dashi no moto, or a simple steeping of katsuo-bushi (Dried bonito flakes and konbu (dried kelp. All ingredients are readily available (even in England and can sit in your cupboard without refrigeration ready for you to use whenever you need it. Nigella, make real Dashi. Don't try to fake it. It is easy as anything else to make and nothing else tastes like it (especially star anise!.

This makes the perfect lunch dish or dinner with a slice of crusty French bread and a side salad.
