I had never eaten "pancetta" before so the local Italian store (Claro's carries it; the recipe is extremely rich and satisfying, bringing new meaning to the words "comfort food". Thanks, Nigella, now I need to draw my "cholesterol" level. LOL.

This recipe had a 5 star rating so I tried it. First, 1 lb. of pasta was way too much! I could've served at least 3 people. And the taste was just so-so. There was no party in my mouth.

I loved this recipe for Carbonara. After dinner I put the leftovers in the fridge for lunch the next day and in the middle of the night my boyfriend went and finished it off!

i loved this one--so so easy (and with four kids that is important!. It is definately more for a family than just one though--lotsapasta!
I gave this only four stars because there were no veggies. Parents, make sure to pair this with a nice spinach salad!

Loved this. From the start, it was well received by the family. I used the pancetta that comes in slices and then cut them into strips. This flavored the sauce quite well. Using pancetta in cubes didn't work that well and the sauce was not as good, so I went back to the sliced pancetta.

This is the easiest recipe and tastes phenomenal. I substituted bacon for the pancetta since I had that on hand. This recipe makes 4 generous servings. It's one I'll be making often.

My parents have made pasta alla carbonara (I say pasta because they would use any type of pasta we had in the house not only spaghetti for as long as I can remember and I have always loved it. This dish is a comfort food for me therefore, I have been looking for a recipe for some time now that was not overly complex, while still containing enough egg and pancetta or bacon for my own personal preference. This recipe fit the bill; it was well explained, came out perfectly the first time I tried to make it and most importantly was absolutely delicious!!!
