    Sorry Guy, but my "Norcal" Carnitas kicks yours to the curb. I made this last night. Its an acceptible carnitas recipe, the finish on the outside of the meat is nice, but its way short on flavor and way more work than it needs to be both on the cooking side (maintain oil temp is a PITA and on the clean-up; tub-o-lard clean up....yeeeckh!

    Maybe Flay will let you substitute for him on Throwdown....call me.

    I made this last night, very good! I was a little nervous because of the lard, I have never used it before. But I have to say this one is a keeper. Keep it up Guy!
