I used 1/4 tsp. cayenne instead of 1/2 tsp., and the soup was still pretty hot. I tried to use less peanut butter because for a healthy recipe, 18 g. of fat per serving is awfully high. I started with 1/3 c. peanut butter and added more as I tasted. Unfortunately I had to use almost 2/3 cup to get any peanut butter taste at all. We liked the soup, but I felt a little guilty eating it because of the fat content.

I made this super bowl of soup to share with family during the Superbowl. What a hit...we are still enjoying it the day after! This recipe is an easy way to score a game winning touchdown!

This soup looks and tastes like a hearty cream-based soup, but without the fat and calories. My kids like spicy food, but this was a little too spicy. I added extra peanut butter & honey to cut the heat. Next time I'll use less cayenne. The green onions do add nice texture to finish the soup.

Watched the show as Elie made this recipe today, and looked so healthy and delicious that I went out and bought the ingredients to make dinner tonight. It was a fairly easy recipe, and very filling. The scallions added a crisp to the soup and are a must, in my opinion.
