You can create up to five timers

Ingredients

  • 1 /14 cups boiling water
  • 1 cup uncooked instant rolled oats
  • 1/2 cup (1 stick) butter at room temperature
  • 1 cup white sugar
  • 1 cup brown sugar
  • 2 teaspoons vanilla
  • 2 eggs
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup millet

Directions

Preheat the oven to 350. Butter 12 muffin cups.

Stir the oats into the boiling water, cover, remove form heat and let stand 20 minutes. Cool.

Sift together the flour, baking soda and salt.

In a large mixing bowl, beat the butter until creamy. Slowly add the white and brown sugars, beating until smooth and creamy. Add the vanilla and the eggs and beat until well blended.

Add the cooled oatmeal to the butter mixture and stir well to blend. Add the flour mixture and stir. Stir in the millet.

Spoon the batter into the muffin cups, filling about 2/3 full. Bake for about 15 minutes, or until a straw inserted in the center of a muffin comes out clean.

Gently run a table knife around the edge of each muffin, lift them out and place on a rack to cool. These muffins freeze well.

    with oatmeal you should always use milk.. and if you infuse it with the vanilla.. then if you add anything to it..say apple.. raisins.. what have.. the recipe can go from there.. but at the very least this most certianly where you should add the vanilla! let it sit and then add your oats... and maybe a cup a bit more.. it won't get over thick like that way as some complained about.. by the way if it does get that.. just re heat and add some more liquid... another hint.. always top before baking with some sugar.. gives that bakery touch... cheers! I only gave 3 stars as I had to make adjustments to know to re read to know..unless you really know HOW to cook this recipe does read well at all... sorry

    This recipe very easy to add to. I replaced butter with canola oil, millet for flax seed meal and then added orange zest and 1/2 cup chopped almonds. Outstanding and very healthy.

    I did not make the recipe exactly as written. I read a previous review and made some changes. I used a bit more oatmeal, with the same amount of water. I also added vanilla extract, cinnamon and apple pie pices. I replaced on egg with apple sauce (I didn't have 2 eggs. Added apple pieces and raisins.
