This receipe is perfect if you want cornbread muffins! The icing is a simple but tasty icing I've made before.

HELP! I've made these cupcakes 3 times now and I really liked them the first time. These last two times however I've felt that the batter was a little thick and then the cupcakes come out kind of heavy-reminds me of pound cake. Could this be due to over working the batter? Or maybe its the milk? The last two times I used whole milk but I think I might not have the first time. Any other ideas???

The flavor was good, but the cupcakes would not rise. Rather, they would spread around ontop of the pan.

I love this recipe and the technique I have used it will all my cakes and they always turn out wonderful. If you find it too eggy just reduce the eggs one at a time. LOVE IT!!!!

My aunt, who says the only thing domestic about her is that she lives in a house, made these with her grand-daughter the other day. They are moist but not crumbly, dense but not dry, and they have perfect old-fashioned white cake flavor. Aunty said they are easy, fool-proof cupcakes and they are delicious.
