NUTRITION INFO
Ingredients
  • 12 ounce salmon fillet, cut into 4 pieces
  • Coarse-grained salt
  • Freshly ground black pepper
  • Toasted Almond Parsley Salsa, for serving
  • Baked squash, for serving, optional
  • Toasted Almond Parsley Salad:
  • 1 shallot
  • 1 tablespoons red wine vinegar
  • Coarse grain salt
  • 2 tablespoons capers, rinsed
  • 1 cup fresh flat-leaf parsley
  • 1/2 cup toasted almonds
  • Extra-virgin olive oil
Directions

Preheat the oven to 450 degrees F.

Season salmon with salt and pepper. Place salmon, skin side down, on a non-stick baking sheet or in a non-stick pan with an oven-proof handle. Bake until salmon is cooked through, about 12 to 15 minutes. Serve with the Toasted Almond Parsley Salad and squash, if desired.

Toasted Almond Parsley Salad:

Mince the shallot and add to a small bowl. Pour the vinegar over the shallots and add a pinch of salt. Let sit for 30 minutes.

Roughly chop the capers, parsley and almonds and add to the shallots. Add the olive oil, tasting as you go. Mix again and adjust the seasonings.

Perfect! Simple and delicious. item not reviewed by moderator and published
This was awesome! I was afraid that not covering the salmon would dry it out. My filet was pretty thin so I only baked it for 10 minutes, then took it out and covered it with foil for 5 minutes before serving it. It was perfect! item not reviewed by moderator and published
I made this for 10 family members and they all said that it was the best salmon they had ever had. It was so easy and very tender and juicy! I made the Toasted Almond Parsley Salad with it and I thought it made it very special and was very tasty! I don't like capers but didn't mind them at all! I will be using this for company dinners. item not reviewed by moderator and published
Trust me when I say that I never review recipes online (literally, this is my first review), but this dish was so delicious that I had to give my rave review. I was highly skeptical that something so simple could be very good, but it was excellent! My oven runs slightly warmer than the average, so I baked the salmon at 425F for 12 minutes, but otherwise I followed the recipe exactly, and it turned out perfectly- it was tender, moist, full of flavor, and so easy!! I served it with sauteed garlic and lemon kale for a healthy, delicious meal. I highly recommend this friends! item not reviewed by moderator and published
I just used this as a guideline for how long to cook the salmon. mine took longer, about 20 min. but still, it came out GREAT. I seasoned as suggested, just with salt and pepper and served it with the Curried couscous salad with dried sweet cranberries recipe also on this site. They went really great together. item not reviewed by moderator and published
Wonderful dish. The flavors mixed well and was a hit at my house. item not reviewed by moderator and published
So good...loved the salad so much I finished every last bite. Not sure how easy it was since my husband cooked, but we will definitely be adding it to our recipe box. item not reviewed by moderator and published
