Ingredients
  • 12 ounce salmon fillet, cut into 4 pieces
  • Coarse-grained salt
  • Freshly ground black pepper
  • Toasted Almond Parsley Salsa, for serving
  • Baked squash, for serving, optional
  • Toasted Almond Parsley Salad:
  • 1 shallot
  • 1 tablespoons red wine vinegar
  • Coarse grain salt
  • 2 tablespoons capers, rinsed
  • 1 cup fresh flat-leaf parsley
  • 1/2 cup toasted almonds
  • Extra-virgin olive oil
Directions

Preheat the oven to 450 degrees F.

Season salmon with salt and pepper. Place salmon, skin side down, on a non-stick baking sheet or in a non-stick pan with an oven-proof handle. Bake until salmon is cooked through, about 12 to 15 minutes. Serve with the Toasted Almond Parsley Salad and squash, if desired.

Toasted Almond Parsley Salad:

Mince the shallot and add to a small bowl. Pour the vinegar over the shallots and add a pinch of salt. Let sit for 30 minutes.

Roughly chop the capers, parsley and almonds and add to the shallots. Add the olive oil, tasting as you go. Mix again and adjust the seasonings.

A sound recipe, but I'd advise checking the salmon at 8-10 minutes. In my 450F oven, 3 filets from a 12-ounce piece of salmon came to just overdone at 140F in 10 minutes. Trust me when I say that I never review recipes online (literally, this is my first review), but this dish was so delicious that I had to give my rave review. I was highly skeptical that something so simple could be very good, but it was excellent! I just used this as a guideline for how long to cook the salmon. mine took longer, about 20 min. but still, it came out GREAT. I seasoned as suggested, just with salt and pepper and served it with the Curried couscous salad with dried sweet cranberries recipe also on this site. I did change up the almond parsley salad recipe a bit, removing capers and instead adding dried cranberries, and I thought it was delicious! Added just a bit of tart kick to the salmon. Good roasted flavour from this recipe. Temperature and cooking time stated leads to a very dry (overlooked) piece of salmon. Fish like salmon is fatty anyway (in a good way) so shouldn't need much olive oil, is nicest served "only just cooked" so start checking after half the cooking time, try to avoid a fan setting on your oven (more drying), and consider 350f / 180c cooking temperature. item not reviewed by moderator and published

I'm paranoid about meat being underdone, so I always have trouble when preparing it because I tend to overcook it. My first time came out just a bit underdone but was great nonetheless. I added some lemon juice and sliced lemon which made it just a bit too moist and juicy.
