Ingredients
- 2 cups brown rice
- 6 cups vegetable stock
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1 teaspoon sea salt
- 1/2 teaspoon cracked black pepper
- 1/2 cup brown sugar
- 1 tablespoon minced fresh ginger
- 1 cup pitted and chopped fresh dates
Directions
Preheat the oven to 350 degrees F.
Add the brown rice, vegetable stock, cinnamon, nutmeg, salt, pepper, brown sugar, ginger and dates to a metal baking pan and mix with your hands to make sure all of the ingredients are distributed evenly. Cover with aluminum foil and bake for 45 minutes to 1 hour. Remove the pan from the oven, transfer the rice to a serving bowl and serve.

Well...still waiting after 1 hour and 5 minutes for it to be done, smells good but I think I should have read the first review! I would not recommend this, go with a 5 star review for brown rice like Alton Brown's baked brown rice.

...did everything as written and after 21/2 hours rice was still crunchy and mushy with an over reduced flavor. It was awful!!!!
