Ingredients
- 6 large russet potatoes, peeled or not, as you like
- 3 tablespoons olive oil
- Salt and pepper
Directions
Preheat oven to 400 degrees. Oil two baking sheets with 1 tablespoon of olive oil each. Slice the potatoes into 1/2 inch wide by 1/4 inch thick fries. In a large. Bowl toss the potatoes with the remaining olive oil. Spread the potatoes out in a single layer on each baking sheet. Bake for 3040 minutes until golden brown. Flip the fries occasionally so that they brown evenly and do not stick. Season and serve.

These oven fries are healthy and tasty. I added coarse ground kosher salt and pepper to the oil before I tossed the potatoes in. I also increased the oven temperature as an attempt to brown the fries but ended up finishing them with the broiler for a few minutes. I found out a tasty way to improve the flavor of my broiled salmon by rolling the fillets in the left over seasoned olive oil before cooking. Good meal served with julienned zucchini and carrots with orange and lemon zest.
