Roasting (cooking with heat from both above and below) is an easy way to make a truly delicious meal out of almost anything. Assemble these ultrasimple dinners on a single sheet pan and pop them into the oven for a fantastic meal.

First, Some Tips

These dinners are easy enough to set up in the morning and then pop in the oven when you get home. Start by lining trays with parchment paper to speed cleanup later.

Choose Pairs Wisely

It’s best to pair ingredients that have the same general cooking time (cutting slower-cooking veggies thinly and quicker-cooking veggies thickly can help you play with the timing, too). Or start slower-cooking items (like pork chops) about 10 minutes before you add the other items.

Prep Your Picks

Season everything before it goes into the oven (and adjust to taste as you’re eating). Toss vegetables with a light coating of olive oil directly on the pan before you add protein. Place greens and frozen vegetables in a foil packet — it’ll keep the moisture close to the veggies but far from foods that should be crispy.

Glaze and Flip

Add any glazes before you cook, and again toward the end of cooking. Flip food at least once during cooking — but don’t go overboard, or too much heat will escape the oven. 

Sausage and Peppers

For a nearly hands-off take on this classic dish, place sweet Italian sausage, sliced bell peppers and onions on the pan.

Drumsticks and Broccoli

Fill the pan with chicken drumsticks tossed with teriyaki, broccoli florets sprinkled with packaged fried shallots, and fingerling potatoes with salt and pepper. Depending on their size, the potatoes might need a little longer to cook, so put them in 5 to 10 minutes before everything else.

Sausage and Broccoli Rabe

Crumble sweet Italian sausage out of its casing, and add sliced fennel and broccoli rabe tossed with garlic slices and red pepper flakes.

Crispy Tofu and Delicata Squash

Dip tender tofu slices in egg, coat with panko breadcrumbs, and season with salt and pepper. Slice half-moons of delicata squash and brush with honey and chili powder, and finish the meal by placing spinach in a foil packet with sesame oil and toasted sesame seeds.

Kielbasa and Sauerkraut

Pair kielbasa with sauerkraut (add caraway seeds, if you like their sharp aroma) and fingerling potatoes.

North African Chicken and Chickpeas

Rub chicken thighs with berbere (an African spice mix), chili powder and cumin powder. Pair with canned chickpeas tossed with olive oil, and carrots seasoned with za’atar and a cinnamon stick.

Barbecue Chicken and Brussels Sprouts

Chicken thighs mopped with barbecue sauce make for a hearty meal when served with halved Brussels sprouts and sweet potatoes dusted with chili powder.
