I changed the cooking process very slightly to suit my needs instead of finishing on the stove after browning rings I transfered them to a baking dish and topped with the tomatoes baked them on 300 covered for about 30 min then 350 uncovered for 10 more -- whta a hit!! my family went nuts - they have requested them again!!

Made this tonight and it turned out delicious! I followed the recipe except I added a little italian sausage. I forgot to fry the sage, but the dish is a keeper! The bell pepper was tender and complimented the meatloaf mixture perfectly. Great, easy recipe!

Sunny's spin on the meatloaf was delicious. I omitted the ground beef and added bread crumbs since the ground turkey is so moist. I have never had a meatloaf so tender and moist. This recipe is a winner in our house. Next time I am going to add some jalepenos to spice it a little more.

Wow! A must try recipe! I was amazed at how delicious this was because it was so simple I thought it would taste more on the bland side. Wrong! Gourmet meatloaf? There is such a thing! This was my first recipe I made from Sunny and it is a keeper. One helpful hint with large families - when you have so many peppers to stick in the oven you might have to use the stove top to simmer the peppers in the sauce. I used one large skillet that I put in the oven and then 2 large pots simmered on the stove. Thanks Sunny!!!

This is my first Sunny dish. I plan to make the salmon in pie crust with spinach as well. This was so good and tasty and healthy. My girls ate it up.

I used ground turkey breast and san marzano tomatoes b/c I couldn't find a 28 oz tomatoes w/ basil. It tasted a little watery, I guess there was some moisture from the peppers while cooking but it had a good taste. I really liked the sage flavor.

I love this recipe! It is easy to make and a nice change from the traditional meatloaf. I will definitely be making this again!
