This recipe was wonderful. Even my father in law, who doesn't like tomatoes or bell peppers (what a weirdo, i know really liked this meatloaf. In fact he said that it was the best meatloaf he'd ever had. I will definitely make this again. A great way to get that extra helping of vegetables without any hassle.

My family never grew up with peppers, but I've been wanting to try some recipes that incorporate them. This was a great place to start! I ended up using fresh tomatoes chopped up, dried basil, and wheat bread (things I already had and it turned out great! The meatloaf was crispy on the outside and fully cooked on the inside, and the peppers were tender without being too soft. Definitely a great and easy meal!

The presentation of this dish was beautiful. The taste was great but not that amazing. I followed the recipe strictly but I felt that I needed more sauce when I was eating it. I ended up eating it with more Worchestershire sauce and ketchup.

I used all beef, rather than half beef, half turkey. Next time I make it, I will add more bread or bread crumbs, as it was a very wet mixture.

The flavor was excellent! Even my husband, who doesn't like bell peppers, at it. I didn't do the fried leaves on top, as sometimes garnish is just extra work.

    Definitely a keeper!

What I don't like about stuffed peppers is all you ever tasted was the pepper or just the tomato sauce. This allowed all the flavors to come alive and the peppers were so tender. I used yellow, orange and red peppers becuase I like the sweet flavor compared to the green pepper. My husband has a very strict diet so I used the 1/2 lb. turkey meat and 1/2 lb italian turkey sausage. I liked the basil but will use just chopped tomatos with garlic. I did not use the fried basil leaf to garnish becuase my grocery store did not supply them. I had to use the dry basil in the seasoning section. I have shared this recipe with friends and will make it again. My mom would be so proud if she knew I was eating stuffed peppers, but I won't tell her my secret. Thanks, Sunny!!

I have made this a bunch of times now, every time I make it friends always compliment on it. The only thing i do differently is not use white bread since I never have any in the house. So I usually use whatever I have, which is usually wheat bread It always comes out great! Once I wasn't able to get ground meat so i just used ground turkey meat, also came out great!

I am a great cook but always looking for new ideas now I love meatloaf and I love stuffed peppers, but when I make stuffed peppers always too much pepper, to slice the peppers and add meatloaf mixture amazing my family went nuts, I changed the recipe and mixed ground beef, pork and turkey with onion soup mix and then i placed the pepper rings in baking dish filled with meat mixture topped with prego spaghetti sauce and baked covered with foil for 45 minutes delicious, I served with macaroni and cheese and a vegetable I will serve this at a party AMAZING!!! 5 STARS

This was tasty, quick and easy. I certainly wouldn't give it 5 stars; it's just ground meat in a pepper afterall. But I liked that the peppers were cut in strips. Nice change from the standard as we don't like a lot of bell pepper. Next time I'd doctor up the canned tomatoes a bit with more seasoning and maybe some extra garlic. But if you're looking for an easy meal that both your husband and child would enjoy, try this one.
