This recipe really helped me make a duck that was tender and not fatty. I love duck and now I can make it at home! Thanks to Alexandra for suggesting the dried cherries. We don't have the razz-cherries available where I live. The sauce was so good my husband wanted to have it on pancakes in the morning. I think he was joking :

These are cherries you buy in the store so you can relax. I have found them at Whole Foods in the bulk section. If you do not have they you could just as easily use dried cherries.

I didn't have hazelnuts and substituted walnuts and it was fantastic! Duck can be intimidating to the amateur cook, especially when searing it and keeping it from drying out - or over/under cooking it. This recipe makes it all come together. Not everyone, especially those outside of a big metro city, will have access to "razz" cherries. I substituted regular cherries and raspberries for the reduction (trial and error. And for the trolls below, if you don't like the concept of the show, then don't WATCH IT. The contestants VOLUNTEERED to do the show. They were not kidnapped and forced at gunpoint to get smacked around on the set. You bedwetters had better not EVER set foot on a US military training base.

what did the poor litttle duck ever do to you? this is a lousy duck breast recipe.
to expect those poor, incompetent people to know how to cook a duck the first time out is stupid. it makes ann and beau look like great big bullies.
duck is my favorite meal and this one sucks.
